Recipe: Sweet Potato Guacamole Sliders

“Sweet potato toast” is becoming more and more popular! It is a great alternative to give your body its carb fix without the gluten while providing vitamins, minerals, and fiber. Try these sweet potato sliders for your next picnic or cookout!




Sweet Potato Guacamole Sliders

Ingredients

Guacamole

  • 2 large Hass avocados

  • 2 tomatoes diced

  • 1 clove garlic

  • 1 red onion

  • 1 jalapeno

  • 1 lime

  • Pinch of sea salt

  • Fresh cilantro


Sweet Potatoes

  • 3 large sweet potatoes

  • 2 tablespoons avocado oil

  • Sea salt and pepper to taste

DIRECTIONS

  1. Preheat oven to 400F. Wash and slice sweet potatoes into ½ inch thick rounds.

  2. Toss sweet potatoes in a bowl with avocado oil, sea salt, and fresh ground pepper. Spread out of a baking sheet lined with parchment paper.

  3. Bake for 10–15 minutes, then flip sides and cook for another 10–15 minutes.

  4. While sweet potatoes are baking, prepare guacamole. Mash all the ingredients together until thoroughly combined.

  5. Once sweet potatoes are removed from the oven and cooled, place a spoonful of guacamole on each slider, garnish, and enjoy :)




Simple, delicious, and nutritious! This recipe is both paleo and vegan friendly. If you would like to dress up the recipe a bit, try drizzling garlic aioli mayo on top! I love dressings and marinades from Primal Kitchen because they are all paleo approved, gluten free, non-gmo, and sugar free.
