High Protein, Plant Based Pasta Salad (gluten free, dairy free)

If you have a summer BBQ or party coming up, this will be your perfect side dish! It is fresh, flavorful and easily customizable based upon your liking and local produce. High in fiber, protein, and vegan friendly, this is a crowd pleaser :)

Ingredients:
1 box of GF pasta (I used Jovial brand)
1/2 cup diced tomatoes
1/2 cup diced cucumber
1/2 cup chopped red onion
1/2 cup halved Kalamata olives
1/3 cup diced peppers
1 can of chickpeas
Vinaigrette -
1/4 cup olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1/2 tsp dried oregano
salt to taste
pepper to taste
*If you are looking for a pre-made dressing, I love Primal Kitchen
Directions
1.) Cook the pasta per box instructions. While the pasta is cooking, clean and cut your veggies.
2.) Whisk the vinaigrette ingredients together.
3.) In a large bowl, combine vinaigrette with pasta, chickpeas, and veggies.
4.) You can enjoy immediately, or chill for later!
