Strawberry Oatmeal Bars - Gluten Free, Dairy free (and even kid friendly!)

I love making oatmeal baked goods because they are an easy gluten free and dairy free treat! I usually love to make my muffins or chocolate chip bars, but because I made these for my family, including my little nephews who can't yet eat chocolate, I tried to get creative.
The gooey oats, flavorful peanut butter and fresh strawberries make the perfect summer treat! These are a great dessert, snack, breakfast, or on the go treat that are adult and kid friendly! Even my picky 18 month nephews approved :)

** Can sub any other nut butter if peanut allergy
Ingredients:
1 mashed banana
2 cups oats
1 egg
1/3 cup maple syrup
1/2 cup organic peanut butter
Vanilla extract
Dash of cinnamon
"Strawberry jam”
1 cup diced strawberries
2 tbsp maple syrup
Directions:
1.) In a bowl, mash the banana, then combine with all liquid ingredients.
2.) Stir in the oats.
3.) Mixed diced strawberries and maple syrup on the stove on low heat. Let simmer and continue to mash.
4.) Coat an 8x8 baking dish with coconut oil and heat oven to 350F
5.) Leave 1 cup of the mixture aside for the topping; use the rest to place an even layer in the pan.
6.) Spread an even layer of the strawberry jam on top.
7.) Crumble the remaining cup of mixture on top.
8.) Bake for 25 minutes.
9.) Let cool and enjoy! :)
