Recipe: Sweet Potato Casserole – Vegan, Gluten Free, Grain Free

Sweet potatoes are great year-round, but especially in the winter time to make comfort food healthier! This recipe will allow you to indulge in your favorite seasonal dish while nourishing your body. The recipe is egg free, dairy free, refined sugar free, grain free and gluten free. A perfect addition to Thanksgiving, or a side to any fall or winter meal!

Cook Time: 1 hour

Servings: 6


Ingredients:

3 lbs. sweet potatoes (3-4 large potatoes)

2 Tbsp. coconut oil (melted)

2 Tbsp. coconut butter (melted)

2 Tbsp. maple syrup

2 tsp ground cinnamon

1 tsp vanilla extract

½ tsp ground nutmeg

Topping

1 cup pecans

1 Tbsp. coconut oil melted

1 Tbsp. maple syrup

1 tsp cinnamon




Directions:

1.) Decide how you would prefer to cook potatoes. I chose to bake the sweet potatoes in a 400F oven for an hour, or, you can boil them for about 30 minutes.

2.) If you are baking the sweet potatoes, clean and place them in the oven at 400F. If you are boiling the potatoes, remove the skins and chop them before placing them in a large pot. Be sure they are covered with an inch of water, then bring to a boil on medium to high heat and cook them for an additional 30 minutes.

3.) Once potatoes are cooked, heat oven to 350F. Remove skin if potatoes were baked, or place the boiled potatoes into a bowl. Combine with coconut oil, coconut butter, maple syrup, apple sauce, milk, cinnamon, nutmeg and vanilla.

4.) If you desire a thicker consistency, then mash the ingredients together. If you prefer smoother, then place in a food processer or blender and blend until you are pleased with the texture.

5.) Distribute the mixture evenly into the casserole dish.

6.) For the topping – you can either use whole pecans (as I chose this time), chopped pecans, or place them in a food processer to form a crumble. Once you choose an option, combine the nuts with coconut oil, maple syrup, and cinnamon in a bowl.

7.) Place topping on the sweet potato mixture as desired, then place in the 350F oven for 30 minutes.

8.) Let cool for 10 minutes then enjoy!
