Chia Seed Pudding (gluten-free, dairy-free)

Looking for a healthy make-ahead breakfast or nutrient dense dessert? This coconut chia seed pudding is naturally free of gluten, dairy and sugar, all while just taking minutes to prep! It is also high in fiber, healthy fats, antioxidants, and plant based protein.

Ingredients:

1 can of coconut milk

1 Tbsp maple syrup

1/4 Cup organic chia seeds

1/2 Tsp pure vanilla extract

1 scoop Ancient Nutrition Vanilla Collagen (can be made vegan if omit or use plant based protein)

Dash of cinnamon


Topping ideas: fresh fruit, coconut flakes, nut butter drizzle, gluten free granola, nuts and seeds, or dairy free chocolate chips


Directions:

1.) In a container combine the chia seeds, coconut milk, maple syrup, vanilla extract and collagen.

2.) Cover and refrigerate for at least 4 hours; overnight is preferable.

3.) Once thickened, stir and combine with your favorite toppings!
