Recipe: Superfood Overnight Oats

Overnight oats are the perfect healthy breakfast staple for many reasons. Oats are known for their many health benefits, and it is so convenient to just grab and go on a busy morning! Oatmeal is high in fiber, iron, protein, and magnesium, along with many other vitamins and minerals. These nutrients provided by oats can help lower cholesterol, stabilize blood sugar, and promote weight loss. Many commercialized oat brands add sugar or other sweeteners to prepackaged servings, so make sure to read your label. For this recipe, I recommend using gluten-free oats that are rolled oats or steel cut oats - even instant oats are fine as long as there is only one ingredient on the label.

I love adding collagen to my overnight oats because it adds texture and flavor, plus collagen has so many health benefits for skin, hair, bones, nails and muscles! Other additions I include for nutrients and texture are chia seeds and flax seeds. Chia seeds are anti-inflammatory and help to regulate blood sugar while providing fiber, calcium, and healthy fats. Flax seeds are also anti-inflammatory, and very high in fiber, potassium, magnesium, and omega 3 fatty acids. Flax seeds can help lower blood pressure and cholesterol just like oats, so they are a great combination!





Ingredients:

1 scoop Collagen powder (vanilla or chocolate are my favorites!)

1 cup dairy free milk of choice

1 tbsp. nut butter

1 tbsp. chia seeds

1 tsp cinnamon



Directions:

  1. Combine all ingredients in a jar or container. Let the mixture sit in the refrigerator overnight, or for at least 6 hours.

  2. Top with fresh fruit, nuts, seeds, cinnamon, and enjoy!
